Pea Soup
Momma's Recipe for Split Pea Soup
(as adapted by myself)
Soak 1 lb. split peas overnight in enough water to cover and 2 T whey or yogurt
In the afternoon of the following day, place the peas (with soaking water) in a pot with a ham bone (the one I used was very meaty, so the meat fell off as it cooked). Simmer on low for a few hours until peas are fall-apart tender. Add water as needed.
In a separate pot, boil the following veggies until tender
1 onion, coarsely chopped
2 carrots, sliced
1 large potato (or a few smaller ones)
When tender, blend until smooth. Add to split peas.
Season to taste with salt and pepper.
Remove ham bone before serving.
Great with a small bit of sour cream (or a drizzle of tasty olive oil) and crusty bread.
